Yields: 6 Bagel Sandwiches
Ingredients:
1 Chopped Red Pepper
1 Sliced English Cucumber
1 Chopped Yellow Onion
1 Head of Romaine Lettuce
1 12-oz Container of Cream Cheese
6-Pack of Fresh Asiago & Herb Bagels
2 Tablespoons of Olive Oil
Directions:
Preheat oven to 350 degrees. Heat olive oil in frying pan, then add chopped red pepper and onion. Saute until edges are brown and onions are soft. Puree veggies in food processor. Mix veggies in with cream cheese. Slice bagel in half and spread cream cheese on both sides. Place bagel halves in oven for 3 minutes (or until edges are slightly browned). Add 4-5 slices of cucumber and a couple pieces of lettuce to each bagel.
Helpful Hint: When making a sandwich a day, freeze two bagels the first day, then defrost on the fourth day.
